The Prepared Pantry — Homemade Brownie Mix


Brownies….warm and soft and chewy. And chocolate-y — who can resist???

The heavenly aroma of chocolate wafting through your home while they are baking is enough in itself to get your mouth watering — your taste buds ready — for the delightful chocolate-y treat =)

If you like brownies, you should really give this recipe a try. They have the consistency of boxed brownie mix — which I *love* — you know, the chewiness. The thin crusty part on top. But unlike the boxed mixes, they don’t taste like cardboard. They taste like cocoa powder….and butter….and sugar….and, best of all, if you take the time to make the mix ahead of time, it takes the same amount of time to make these in a pinch as it would to make a store-bought boxed mix.

Let’s get to baking, shall we?


To create the mix, you will need:

  • 1c. white sugar
  • 1/3c. unsweetened cocoa powder
  • 1/2c all purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder

Sift together and place in an airtight jar. Yields 2c. mix.

(Just a hint: this recipe makes one 9×9″ pan. I have made several batches of this at once, to store in a large jar, and measure out 2 cups mix.)

To make brownies:

  • 1/2c. butter (1 stick) melted, and slightly cooled…you don’t want to cook your eggs by using boiling hot butter!
  • 2 eggs
  • 1 tsp. vanilla

In a medium sized bowl, mix together eggs, vanilla, and two cups of mix. This will eventually be all incorporated together — doing it by hand takes some time. Add the butter and stir until just mixed together. This will be thicker than your usual brownie batter….it was so thick, in fact, that I really thought I missed something the first time I made them. Then I tasted them, and knew nothing had been left out….but I digress :-) Spread batter in a well greased 8×8″ or 9×9″ pan. Bake at 350 degrees for 20 – 22 minutes.

Let them cool before cutting. When mine were completely cool, I sprinkled powder sugar over the top for an extra touch of prettiness….DSC_0016This is a seriously good recipe. We have a made-from-scratch recipe I love, and I was thinking these would be mediocre-I-have-nothing-for-dessert-and-they-decided-to-stay-for-supper type brownies….but have since decided that these will become my go-to ones, the ones I make all the time. When we have guests, when we need something quick for our church’s potluck lunch, or when we just plain need a chocolate pick-me-up :-)DSC_0017
