Another recipe for the Prepared Pantry series today for all you lovely ladies — and wouldn’t you know it would be another chocolate recipe =) I mean, seriously, it’s hard to go wrong with chocolate!!! Especially when you are able to add coffee to it, as I did with these cupcakes……creating a chocolate cupcake with delicious mocha frosting.
For the mix, you will need….
1 3/4 c. All Purpose Flour
2 c. Sugar
3/4 c. Cocoa Powder
1 1/2 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1 tsp. Salt
Whisk together all ingredients in a large bowl. Store in an airtight container. Yields 4 1/2 c. mix.
(I made up a large quantity of this mix mix to fill up our pretty jars, and just measure out the amount of mix I need per recipe.)
To make the cake…..
2 Eggs, room temperature
1 c. Whole Milk
1/2 c. Vegetable Oil (I used melted butter here)
2 tsp. Vanilla
1 c. Coffee, warm — but not too warm because you don’t want to cook your eggs :D
Preheat oven to 350*. Grease and flour two 8″ round cake pans, or one 9×13″ pan, or line muffin tins with cupcake liners. Whisk together all wet ingredients until well combined and slightly frothy. Add 4 1/2 c. dry chocolate cake mix and stir gently until just incorporated and smooth — about 50 strokes. Divide between prepared pans. (This made about 36 cupcakes — the perfect amount for sharing at our church.) Bake until set and toothpick in center comes out clean, about 25 minutes. Let cool for 10 minutes, then remove from pans. Let cool completely before frosting. You can frost with any kind of frosting you wish — for a plain chocolate cupcake, the flavor combinations are endless…..but for me,there’s one choice that stands out above all the rest. Mocha Frosting. Delicious coffee and chocolate, all wrapped up in one smooth frosting. And with a chocolate cupcake underneath…..YUMMY!
For the Frosting
4 1/2 c. powdered sugar (or thereabouts)
3 TBS. cocoa powder
1 c. butter, softened
1/4 c. strongly brewed coffee (I increased this amount because I like the coffee flavor, but it could have used a bit more in my opinion)
Beat the butter until creamy. Add the cocoa powder. Gradually add in the powdered sugar until it is all incorporated. Add in the coffee until you reach the desired consistency.
Enjoy the simplicity and ease of a boxed mix without all the ingredients you can’t pronounce! Have fun cooking!
